Purple Kohlrabi is a colourful form of Kohlrabi grown mainly for its distinctive swollen purple stem that develops above the soil surface.
The outer skin develops purple to violet coloring, while the inner flesh is generally pale, crisp and juicy.
When harvested young, the stem has a mild flavour similar to cabbage or turnip.
The leaves and tender stems are also edible.
