Lamb’s Lettuce (Valerianella locusta), also known as Corn Salad or Mâche, is a fast-growing, cool-season leafy green with soft, spoon-shaped leaves and a mild, nutty flavor. It is highly nutritious and rich in vitamins A, C, iron, and antioxidants. This salad green is very popular in winter salads and gourmet dishes due to its tender texture and pleasant taste.
