Grow traditional Black Carrots (Kali Gajar) at home from seeds. This distinctive winter root vegetable develops deep purple to almost black roots and is especially popular in Pakistan and North India for making kanji, a fermented seasonal drink.
Ideal for kitchen gardens, raised beds, deep pots and GREEN GARDENS Grow Bags. For smooth root development, use a loose growing medium prepared with GREEN GARDENS Vermicompost and Bhalu Mitti, and avoid hard or compacted soil.

Black Carrot, commonly known as Kali Gajar, is a traditional winter carrot valued for its striking dark purple to nearly black roots.
The intense colour comes from naturally occurring anthocyanin pigments. Black carrots are especially associated with kanji, a fermented drink traditionally prepared during winter.
For the best root shape, grow carrots in deep, loose soil free from stones and hard clods.

The growing medium should be:
Avoid fresh manure and excessive nitrogen, as these may encourage leafy growth or irregular root formation.
1. Prepare the Growing Medium
Mix 50% Vermicompost + 50% Bhalu Mitti thoroughly.
Remove stones, hard lumps and undecomposed material so roots can develop freely.
2. Sow Directly
Black carrots are best direct-sown in their final growing location.
Avoid transplanting, as root disturbance can cause forked or misshapen carrots.
3. Sowing Depth
Sow approximately:
0.5–1 cm deep
Cover lightly with fine soil.
4. Water Gently
Use a fine shower after sowing.
Keep the surface consistently moist throughout germination.
5. Germination
Seeds generally germinate within:
10–21 days
under suitable conditions.
Be patient, as carrot seedlings may emerge gradually.
6. Light Requirements
Provide approximately 5–6+ hours of sunlight daily.
7. Thin the Seedlings
Once seedlings are established, thin crowded plants carefully.
Maintain approximately:
5–7 cm between plants
for better root development.
8. Watering
Maintain even soil moisture throughout growth.
Avoid prolonged dryness followed by excessive watering.
9. Feeding
The recommended growing medium already contains Vermicompost.
Avoid excessive nitrogen fertilizer because it may encourage leafy growth at the expense of root development.
10. Weed Control
Keep the growing area free from weeds, particularly while seedlings are small.
Remove weeds carefully to avoid disturbing developing roots.
11. Root Care
If the tops of roots become exposed above the soil, gently cover them with loose soil.
12. Harvesting
Harvest once roots reach a useful size and develop their characteristic deep purple-black colour.
Pull carefully when the soil is slightly moist to reduce root breakage.
Harvest progressively rather than waiting for every root to mature at the same time.
