White eggplant, also called Japanese eggplant, is a variety of eggplant that is white in color and has a slightly sweeter flavor than other varieties.

To sow white eggplant, start by soaking the seeds in water for 24 hours. Then, fill a seed tray with well-draining potting mix and plant the seeds about ½ inch deep. Water the seeds well and place the tray in a warm, sunny location. Keep the soil moist, but not wet, and within 10-14 days the seeds should germinate.

Once the seedlings have reached about 4 inches tall, they can be transplanted into individual pots or into the garden. Eggplant prefers warm weather and full sun, so choose a spot in the garden that receives at least 6 hours of sunlight per day. transplant the seedlings 18-24 inches apart.

Water the eggplant plants regularly, especially during dry periods. Eggplant is ready to harvest when the fruits are 6-8 inches long and firm to the touch. Cut the fruits from the plant with a sharp knife, being careful not to damage the plant.
